Such is Mango
This mango parfait is simple, fast and perfect for a weekday treat. It's suitable for breakfast or dessert, my two favorite meals, and it has me convinced that crunchy, toasted coconut should be incorporated into all yogurt parfaits.
PS - When it came time to title this post, all I could picture was Chris Kattan saying things like, "Can you put the sky in your mouth?"
Mango Parfait
Recipe courtesy of Everyday Food
To make the mango puree:
2 ripe mangoes, peeled, pitted, and cut into chunks
1/3 cup sugar
2 tablespoons water
Combine mangoes, sugar, and water in a blender and puree until smooth. Makes 3 cups.
For parfait:
4 tablespoons Mango Puree
1/2 cup Greek yogurt
1 tablespoon toasted coconut
Spoon 2 tablespoons mango puree into a tumbler and add 1/4 cup Greek yogurt. Repeat layers and top with toasted coconut.
Mango is my favorite. This looks so beyond delicious!

ReplyDeleteOh yum yum yum!!! I have the hardest time peeling and cutting mangos!! :D I buy big bags of frozen chunks to solve that problem. :) Can't wait to try this!

ReplyDeleteI actually do have mangoes... and Greek yogurt... and coconut- which is not normally the case. Looks like this is what we'll be having for dessert tonight:).
