Last night, I needed a fast, easy dinner so I could slump down on the couch and watch the Golden Globes. I made what I affectionately (and probably inaccurately) refer to as an Italian grilled cheese. It's filled with gooey mozzarella, prosciutto and some torn basil. Paired with a bowl of tomato soup and
kale chips, it made for a perfect cold day comfort meal.
Looks absolutely delicious!! I now know what I'm making for dinner tonight! =)

Yum! Looks delicious! Sometimes I coat my bread with a little balsamic before cooking----either way--always love a good grilled cheese.

There's really nothing like a grilled cheese sandwich. It's one of my favorite go-to meals. I like to experiment with different types of cheese, to spice things up a bit, but I always come back to mozzarella -- it's my favorite.

I made this for a small cozy dinner party (with some tomato soup) and they absolutely loved it. I got this in an email the next day from one of our dinner quests "this is the best sandwich of my life." I have to agree. It was awesome.
