I figured I may as well go out with a bang for the summery frocktails, so a watermelon mojito and a dress in the same shade were in order. I love a mojito, and mint and watermelon certainly suit each other. It's refreshing and so perfect for the long goodbye to summer.
The dress is a maxi style number with a flowy sheer skirt. The color makes a statement but isn't overpowering. It's the sort of breezy dress you'd want to wear while standing at the end of long dock, gazing at the sunset over the water while Frank Sinatra plays somewhere off in the distance. At least a girl can dream about that anyway, and a couple mojitos don't hurt.
20 mint leaves
1 lime, cut into 8 wedges
2 tablespoons simple syrup
3/4 cup white rum
3 1/2 cups watermelon, remove seeds and cut into cubes

club soda
Muddle mint leaves and lime wedges in a sturdy container. Add simple syrup and 1/2 cup of watermelon cubes and continue to muddle. Add remaining 3 cups of cubed watermelon to a blender and puree. Pour through a fine-mesh sieve into a measuring cup, pressing to extract as much liquid as possible. You should end up with approximately 1 1/2 cups of watermelon juice. Discard solids. Add strained watermelon juice and 3/4 cup of white rum to muddled mixture. Fill two glasses with ice and divide mojito mixture between glasses. Top with club soda and give it a stir. Garnish with mint. Makes 2 tall mojitos.

ReplyDeleteI'm not normally a watermelon fan, but I've come to love it in mixed drinks. Go figure! Love the dress/necklace combo too. And thanks for mentioning that etsy shop. It seems like a great resource for inexpensive jewelry.
